Fish flour is an important source of animal protein because it contains complex amino acids such as lysine and metinine which are found in fish feeds. Biscuits snacks that easy to get liked by many people. The purpose this study was determine the effect different characteristics catfish biscuits with addition each concentration treatment on physical, chemical organoleptic properties (0%, 5%, 10%, 15%). research method used a Completely Randomized Design One Component Factors four treatments B0, B1, B2 B3. Research analysis carried out included (moisture content, ash fat content) color test. results indicate obtained moisture content between 4.96-4.53%, 2.19-4.07%, 62.95-78.23%, 6.74 -8.68%, Color 10.73-7.73%, Texture 24.01-23.18%. test can reduce value
